Candy Crush

I have named this Candy Crush !! because anybody can fall in love with these Ice -Candies,so i had a crush on them... What about you!


Ingredients 

  1. Lemons - 2 whole
  2. Sugar - 3 tbsp(according to your taste)
  3. Water - 1 cup 
  4. Salt - 2 pinch
  5. Chopped fruits (of your choice )I have taken-
  6. Loquat (Chinese plum)3 to 4 pieces
  7. Green grapes - 10 to 11 pieces
  8. Kiwi - 1 whole fruit


Method
    1. Take a bowl add water in it.
    2. Squeeze the lemons and take out its juice.
    3. Add sugar and salt in it.
    4. Mix it properly till the sugar gets dissolved completely.
    5. Take the chopped fruits  and start putting them in the moulds.
    6. Take the lemon water and pour it in the moulds.
    7. Add more fruits on the top.
    8. Close the lid of the moulds and deep freeze it for 7 to 8 hours.

Dahi Wale Aloo

Dahi wale aloo !! One day i came back from a holiday trip and i found nothing in my fridge as i opened my fridge and found a bowl of curd with few green chilies and some 'Aloos' in the kitchen,so i tried my hands on this quickest,
simplest and yummiest recipe. I am sure its going to be your choice also, when you are not going to find anything special in your kitchen.

Ingredients -
  1. Boiled potatoes - 4 to 5 (medium sized)
  2. Curd - 1 cup
  3. Green chilies (chopped)
  4. Coriander leaves (optional)
  5. Asafoetida - 1 pinch
  6. Cumin seeds - 1 tsp
  7. Red chili powder - 1 tsp
  8. Coriander powder - 1 tsp
  9. Mango  powder - 1 tsp (optional)
  10. Salt as per taste


Method -

  1. Take potatoes peel them and cut them into small pieces and  you can mash them little bit.keep aside
  2. Then take a wok add 2 tsp oil add asafoetida and cumin seeds in it.Let it crackle.
  3. Add green chilies and potatoes in it.
  4. Stir the potatoes and add salt,chili powder,coriander powder,mango powder and mix it well.
  5. Now take the curd whisk it properly and add it into the wok.
  6. Stir it continuously add  little water (not much).
  7. Then stir it for 2 minutes not more than that otherwise the curd can curdle.
  8. Switch off the flame and garnish it with green coriander leaves.
  9. Enjoy it with Jeera Rice or Paranthas.

Daal Makhni



 Daal Makhani 

This daal makhani is dedicated to my mom-in-law!!Whenever she comes to my house.she always demands for this daal.Its a time consuming dish, but i must say the result you will be getting will be fruitful.
Its really Delicious and  Mouthwatering daal with loads of  flavors.

Ingredients 
  1. Whole urad dal - 2 cup
  2. Kidney beans - 1 cup
  3. Water - 4 to 5 cups(For soaking)
  4. Cumin seeds - 1 tbsp
  5. Bay leaves - 1 leaf
  6. Red chili powder - 1 tsp
  7. Turmeric powder - 1/2 tsp
  8. Onion - 2 medium sized
  9. Tomatoes - 4 to 5 (chopped)
  10. Green chilies - 2 to 3
  11. Ginger - 1 inch(finely chopped)
  12. Garlic - 7 to 8 (finely chopped)
  13. Sugar - 1/2 tsp 
  14. Garam masala - 1 tsp
  15. Coriander powder - 1 tbsp
  16. Mango powder - 1 tbsp(optional)
  17. Salted butter/Ghee - 2 tsp
  18. Fresh malai or cream - 2 to 3 tbsp
  19. Milk - 1 cup
  20. Salt as per taste



Method -
  1. Firstly soak the daal overnight in water and in the morning pressure cook the daal with 5 to 6 whistles and let it cool.Check the daal it should be properly cooked ,if not go for more whistles by adding more water.
  2. Take a wok add 2 tbsp of oil,cumin seeds and bay leaf.
  3. Let it crackle add onions ,ginger -garlic, chilies, stir them till they turn golden brown in color.
  4. Add the chopped tomatoes .Stir it well.
  5. When the tomatoes starts turning soft add sugar,red chili powder,Coriander powder,Mango powder,salt and garam masala.
  6. Now add the boiled daal in it.
  7. Stir the daal ,when it starts boiling add milk in the wok.
  8. Again stir it for 15 minutes.
  9. Now add butter and malai both in the daal.
  10. You can add water if needed.
  11. Mix the daal and keep stirring it,till it gets mixed properly.
  12. Special tip to make your makhani daal more tastier is that you should keep the daal on slow flame and it should not have any foam on the top.
  13. Lastly you can add more ghee or butter if required.
  14. Sprinkle freshly chopped  coriander leaves.
  15. Enjoy your Makhani daal with Rice or crispy paranthas.

Chocolate Mango Jugalbandi




                                     Chocolate - Mango Jugabandi

Chocolate - Mango Jugalbandi  sounds Funny!I have named it this because its a good mix of chocolate and creamy mango pulp.A must try recipe in summers when you are in mood to skip the dinner,its a satisfactory dessert.

Ingredients -
  1. Bourbon Biscuits - (8 to 10 pieces) 
  2. Sugar - 1 tbsp 
  3. Condensed milk - 2 tbsp
  4. Milk - 2 tbsp( you can add more to make the batter little wet)
  5. Fresh cream - 200 ml
  6. Mango pulp - half cup(1 mango is enough)
  7. Castor sugar - 2 tbsp
  8. Chocolate bar or compound - half cup


Method -
  1. First take a bowl and add biscuits in it by crushing them or you can grind them also.
  2. Add sugar also and grind it with the biscuit powder.
  3. Now add condensed milk and milk slowly.
  4. Mix it well.
  5. Now take a pan add cream in it and add chocolate bar in the cream.
  6. Wait for a boil,mix it again so that the chocolate should melt properly.
  7. Let it cool a little bit.
  8. Take the chocolate cream and mix with crushed biscuits.
  9. Pour the mix in the moulds and keep in fridge for 30 minutes to 45 minutes (till it gets chilled)
  10. Now take mango pulp add castor sugar and rest of the cream (100 ml) in it.
  11. Mix it well by whisking it and keep in fridge for 10 minutes.
  12. Now take the moulds  and pour the mango creamy pulp on the top of chocolate biscuit  mix.
  13. Again set in fridge for 10 to 20 minutes to serve it chilled.

Wheat Spring Rolls



                                                 Wheat Spring Rolls


Spring roll is a popular Chinese snack,its crispy from outside and the veggie stuffing is little crunchy from inside.But usually they are made up of maida and with loads of Chinese sauces which are not suitable for our children as well as adults,So i have tried little healthy recipe for spring rolls.

Ingredients - 

  1. Normal wheat dough with added salt(The dough should be little tight as we make for puris)
  2. 1 Cup shredded cabbage
  3. 1 Small sized onion(sliced)
  4. 1 Cup of  capsicum(roughly chopped)
  5. 1 Cup of boiled noodles (any type of noodles you can use instant also)
  6. Chili powder - 1 tsp
  7. Mango powder - 1 tsp or Vinegar 2 tsp(its Your choice)
  8. Coriander powder - 1 tsp
  9. Salt as per taste
Method -

Firstly boil the noodles and strain them in cold water and sprinkle few drops of oil to prevent from stickiness.

For Stuffing -
  1. Take a wok add 1 tsp oil in it.
  2. Add onions and saute it,for 2 minutes.
  3. Now add cabbage,capsicum and stir well.(it should not be overcooked) 
  4. Now add boiled noodles in it.
  5. Now add salt,chili powder,mango powder and coriander powder.Mix it well for 3 to 5 minutes not more than that to get crunchy texture.(you can use soya sauce and vinegar also, but remember the veggies should not have a wet texture)
  6. Keep aside and let it cool.
  7. Take a wok add oil and wait till it gets hot.
  8. Take the wheat dough make start making its balls and roll the dough with the help of roller as we prepare for puris.
  9. Now take the stuffing (around 2 tsp)and fill it in the center fold it and closed its sides.
  10. Deep fry the spring rolls.
  11. Take them out on an absorbent paper and cut it into pieces.
  12. Enjoy!!

Curd Fry Aloo

This Curd fry Aloo is No onion No garlic recipe. Most of us are fond of eating potatoes everyday, and we always want a change in making "aloos"!So i have tried making potatoes in a different and tasty form.Hope you are going to like this.

Ingredients -


  1. Boiled small sized potatoes - 7 to 8
  2. Thick curd or Hung curd - Half cup
  3. Salt as per taste
  4. Red chili powder - 1 tsp
  5. Pepper powder - 2 pinch
  6. Coriander powder -1 tsp
  7. Cumin seeds - 1 tsp Mango powder - 1 tsp (optional)
  8. Fresh chopped coriander 
  9. Oil for frying




Method - 

  1. First peel the potatoes.
  2. Then take a bowl add potatoes in it.
  3. Add Curd,chili powder,pepper powder and coriander powder.
  4. Marinate the potatoes and keep them in fridge for 1 hour.
  5. Now after one hour take them out and prick the aloos with a fork,so that  the masala and curd should be inserted properly.
  6. Take a wok add oil.
  7. Add cumin seeds let it crackle.
  8. Add one by one potatoes  in the oil with the help of a fork and fry them.
  9. When they turn little crispy add mango powder,salt chili powder (if needed)
  10. Take them out and garnish it with fresh coriander.

Dilkush Paan Ice Cream




                                           Dilkhush Paan Ice Cream

This Ice -Cream , I have named it(Dil -khush) because its going to relieve you from scorching heat as well as its going to refresh your mind.The flavor ofPaan(betel)will act as a mouth freshener and will add freshness in your taste-buds.So it will create a Happy mood!!

Ingredients -

  1. Milk (full cream) - 2 cups
  2. Fresh Cream - 150 ml
  3. Cornflour 1 tbsp (diluted in water)
  4. Sugar - 1 cup
  5. Gulkand - 1 tbsp
  6. Betel leaves - 4 to 5
  7. Green cardamom(2 pieces)
  8. Fennel seeds ( 1/2 tsp)
  9. Betel Nut (supari)- 4 to 5 pieces(you can use methi supari also)
  10. Colored edible balls and dry coconut for garnishing

Method -
  1. Take a pan add milk .
  2. Add sugar in it.
  3. Wait for a boil .
  4. Add cream and cornflour ( diluted in water).
  5. Stir it very nicely and boil it till it starts getting thick.
  6. Switch off the flame.
  7. For paan masala -
  8. Take Betel leaves,betel nuts,fennel seeds,green cardamom and grind them.
  9. Now take the ready milk add this paan masala into it.
  10. Add gulkand in the same.
  11. Mix it well.
  12. Now let it cool down for 10 minutes.
  13. After it gets cool ,Take the mould and add the first layer of gulkand in it (from the top).
  14. Then pour the mixture in the moulds .
  15. Freeze it for 4 to 6 hours.
  16. Demould the ice cream and garnish it.
  17. Enjoy!!

Lemon Iced Tea




                                            Lemon Iced Tea

The most refreshing and coolest drink in summers.Its one of the healthiest drink , drinking a glass of iced tea during the day can take care of most of our problems. Iced tea is rich in vitamins, minerals and anti-oxidants that keep a check on calories consumed during the day. 

Ingredients -


  1. Water -2 cups
  2. Sugar - 4 tsp(You can take more if you like more sweetness in your iced tea)
  3. Lemon juice ( 1 tsp)
  4. Wedges of lemon
  5. Mint leaves - 4 to 5 
  6. Tea leaves - 1 tsp
Method - 
  1. Take a pan add water and sugar in it.
  2. Let it boil.
  3. Take a glass add mint leaves.
  4. Put lemon wedges.
  5. Add lemon juice.
  6. Now in the pan add tea leaves and wait for one boil.
  7. Strain it and let it cool for 10 minutes.
  8. Then in the glass add ice cubes and pour the tea.
  9. Again add some more lemon juice if you require more tangy flavor.
  10. Serve it chilled.

Potato cheese croquettes is one of tastiest snack.Its crunchy - crispy from outside and soft from inside.It also contains one of my favorite ingredient and that's cheese!! mmmm.....

Ingredients - 


  1. Potatoes ( boiled) - 4 to 5
  2. Bread Crumbs - 1 small cup
  3. Onion (chopped) - 1 to 2
  4. Crushed garlic - 4 to 5 cloves
  5. Mozzarella cheese (shredded) - 1/2 cup 
  6. Cornflour - 2 tsp dissolved in water
  7. Salt,Black pepper,chili powder as per taste
  8. Oil for frying

Method - 
  1. Take a bowl add boiled potatoes in it
  2. Now mash the potatoes properly 
  3. Add chopped onions
  4. Add crushed garlic
  5. Then add salt,pepper powder,chili powder
  6. Mix it well 
  7. Now take a wok add oil ..wait till it gets hot
  8. Now make the balls of the potato mixture
  9. Take mozzarella and fill this in the center of the ball and roll the balls again in a round shape.
  10. Take a ball and dip it in the cornflour water
  11.  Roll it on the bread crumbs
  12. Deep fry it..Flip it slowly.
  13. Enjoy with your favorite dip or ketchup.

I love kids,So i always try those dishes which are nutritious and tasty for our children.As summer has arrived and vacations are also going to start,for me holidays means demanding kids.Right ?
To fulfill our kids demand in a healthy way, i have tried my hands
on this Choco-Fudge-Popsicle.It contains whole milk and chocolate.So do try for your kids as well as adults.


Ingredients -

  1. Granulated sugar - 2 tbsp
  2. Cocoa powder - 2 tbs
  3. Chocolate bars or compound - (half cup)
  4. Cornflour powder - 3/4 tbsp
  5. 3/2 cup of milk


Method - 
  1. Take pan add cocoa powder,sugar,chocolate bars,cornflour half of the milk(1/2) .
  2. Whisk it well.
  3. Now again add the rest of the milk.
  4. Stir it nicely to avoid lumps.
  5. Now switch on the flame and cook this briefly, till it bubbles slightly.
  6. Stir it from the bottom to avoid the chocolate to get stick to the bottom.
  7. Take it off.
  8. Let it cool for some time.(10 - 15 minutes)
  9. Pour it into the mould.
  10. Deep freeze it for 4 to 6 hours.

Enjoy the freezed cool cool!! Popsicle!!

Stuffed Kulcha


Stuffed Kulcha 

Kulcha is available in market and we usually have them with matar or chanas .So for a change i have tried this stuffed kulcha !! This kind of stuffed kulchas we get from bakery shops also but at a high cost and they do not consist of fresh veggies.So stop worrying about outside unhygienic food , you must go for this fresh and tasty kulcha!! 

Ingredients -

Ready made kulchas - 2 
Boiled corns - 1/2 cup
Onion - 1 medium sized (sliced)
Cottage cheese(paneer) - 100 grams
Capsicum - 1 (julienne)
Green chili - 1 or 2 (chopped)
Tomato - 2(chopped)
Butter - 2 tbsp
Red chili powder - 1 tsp
Coriander powder - 1 tsp
Mango powder - 1 tsp
Sugar - 2 pinch
Salt - as per taste

Method
1.Take a wok add 1 tbsp butter,onions.
2.Stir fry it till it changes it's color.
3.Add boiled corns,tomatoes,green chilies,capsicum in it.
4.Stir it for 5 to 7 minutes.
5.Now take the panner crumble it add it in the veggies.
6.Now add all the masalas in it.Mix it well for 2 minutes.
7.Keep aside the veggies and let it cool down.


For kulchas
1. Take a tava add butter on it and place the kulchas on the tava.
2.Roast them till they turn little brown in color.
3.Now take the veggies and start filing the kulchas press them and fold it.
4.Cut it from the center.
5.Enjoy :-) hot crispy STUFFED KULCHAS

The only reason i like summers is just because of Mangoes !!
As scorching summers are on head ,So we do not feel to have or  to make sabjis all the time.This instant mango pickle is going to add taste in your food without any sabji.

Ingredients --

  1. Raw mangoes (250 grams)
  2. Fennel seeds (1 tbsp)
  3. Asafoetida (1 pinch)
  4. Sugar(1 tsp)
  5. Salt as per taste
  6. Cumin seeds(1 tsp)
  7. Mango powder (1 tsp)It will enhance the taste
  8. Red chili powder(1 tsp)or (you can take 1/2 tsp also )
  9. Coriander powder (1 tsp)
  10. Green chilies( 2 to 3)
Method -
  1. Take the mangoes wash and cut them into thick slices with their skin.(you can peel the skin if you want)
  2. Then take a wok add 1 tbsp oil ,let it get little hot.
  3. Add fennel seeds,cumin seeds, asafoetida wait for the crackling sound.
  4. Add green chilies and mango slices in the wok.
  5. Stir it and add salt,sugar,chili powder,coriander powder and mango powder.
  6. Mix it well and cover it with a lid for 4 to 5 minutes.
  7. Ready to eat.Enjoy!!

Hakka Noodles with Veg Manchurian

                         

      
          Hakka Noodles with Veg Manchurian

Chinese food is my weakness!! and now days kids are becoming so fond of Chinese food but in summers its not good to have Chinese from outside,so i have tried this specially for children who always force their mommys to get Chinese for them from market.This Manchurian contains vegetables which are really good for health.So try this out I am sure your kids gonna love this and they will forget the outside food.

Ingredients For Hakka Noodles - 

  1. Hakka noodles packet - 1 pack
  2. 1 small sized onion (chopped one)
  3. Oregano - 1 tsp
  4. Salt as per taste
  5. I haven't used soya sauce in it,you can use if you want
  6. Mango powder - 1 tsp 


Ingredients for Manchurian -

  1. 1/2 cup boiled baby corn (cut it into pieces)
  2. 1/2 boiled mushrooms(in small pieces)
  3. 1 medium sized onion (thin sliced)
  4. 1/2 cup spring onions(chopped one)
  5. 2 tbsp cornflour 
  6. 1 cup water
  7. 2 Green chilies (chopped one)
  8. 1 tbsp garlic(chopped one)
  9.  1/2 tbsp soya sauce 
  10. 1/2 tbsp vinegar
  11. 1/2 tsp crushed black pepper 
  12. salt as per taste
  13. sugar as per taste
  14. some chopped spring onions for garnishing




    Method -  

For Hakka noodles

  1. Take a pan add water around 2 cups let it boil.
  2. Add noodles and boil them for at least 7 to 10 minutes.
  3. When it will start turning soft take the noodles out from the pan and strain it.
  4. Now wash the noodles with running water to remove the stickiness.
  5. Now strain the noodles and sprinkle 1/2 spoon oil in it.
  6. Keep it aside.
  7. After that take a pan add oil around 1 tsp add onions in it,stir it for 2 minutes.
  8. Add hakka noodles in it ,salt,mango powder,oregano and stir it very gently to avoid breaking of noodles .
  9. Your Hakka noodles are ready.

For Manchurian -
  1. Take a pan add oil,put onion stir fry it for 1 to 2 minutes.
  2. Add boiled baby corns,mushrooms,green chilies,spring onions and garlic.Saute it for 3 to 5 minutes not more than that.(there is no need to brown them)
  3. Add water,pepper, soya sauce and stir it well.
  4. Now take a small bowl add cornflour with water stir it and add it in the wok to thicken the sauce.( you can add more cornflour according to its consistency)
  5.  Add vinegar,salt,sugar and make the flame simmer for few minutes.
  6. Garnish it with spring onions.
  7. Serve your Veg Manchurian with Hakka Noodles.
