Panjiri

Panjiri
Panjiri is a nutritional supplement.It is made from whole wheat flour with rich nuts and made up of pure desi ghee.It is usually eaten in the winters to ward off cold.
panjiri is a good source of energy given to the pregnant women and nursing mothers 
Panjiri is an instant power booster for all the ages,whether it is given to children ,when they are going to sleep,just give them 2 teaspoons with a warm glass of milk and even to old aged people as it provides energy and immunity to fight with cough and cold and weakness in the body.As now many women are working,and they hardly get time to look after themselves,so this panjiri can solve their problem and can make you feel more energetic and active.
This panjiri contains tragacanth gum herb(gond)which is very much good for pregnant ladies as well as it stimulates the immunity system of the body.



This panjiri is not only healthy but it tastes so yummy.The crunchiness of  gond ,the taste of mixed nuts and the aroma of pure ghee is a bliss in winters.You can have this panjiri daily in the morning with a cup of tea or milk and in the night also with a glass of hot milk not tea!
So here goes the winters delight Panjiri recipe -



Ingredients-

  1. Whole wheat flour - 2 cups
  2. Semolina - 1/2 cup
  3. Powdered Sugar - 11/2 cup(increase or decrease the quantity according to your taste buds)
  4. Jaggery powder - 50grams(optional)
  5. Green ilaichi powder - 1/2 tsp
  6. Black pepper powder - 1 tsp
  7. Desi ghee - 100 grams(you can add more also)
  8. Almonds chopped - 20 to 25 pieces
  9. Raisins - 15 to 20 pieces
  10. Gond katira - 15 to 20 small pieces

Method -
  1. Take a wok add 2 tbsp ghee in it and fry edible gum ,when the gum starts popping up,take it out.
  2. Then add almonds and raisins,fry them for 1 to 2 minutes not more than that otherwise it can give a burnt taste.
  3. keep aside all the fried ingredients.
  4. Now in the same wok add more 2 tbsp ghee and add semolina and wheat flour together,roast it well.
  5. Add ilaichi powder and jaggery powder and mix it well.
  6. After 10 minutes when you find that the flour has started changing its color,then add sugar in it.
  7. Now roast-roast till you will find the flour has turned light brown in color.
  8. When your flour is properly roasted add the fried dry fruits including edible gum in the flour.
  9. Now add black pepper powder and again mix it off.
  10. Mix it very well(do not forget to check the sugar taste)
  11. You can add more powdered sugar if needed.
  12. You can turn off the flame if it is done.
  13. Last step is very important.
  14. Take a small wok add all the around 70 to 75 grams ghee and melt it properly.
  15. Add the melted ghee in the ready panjiri.
  16. Your power pack Panjiri is ready to enjoy.

makhan mushroom

Makhan Mushroom

Winters has already knocked down our doors!So you must be finding mushrooms in abundance,so why not to try out this tempting buttery mushroom veggie.
Its not only a vegetable but it provides several important nutrients as it decreases the risk of  diabetes and enhances the immunity level of the body.
Mushrooms does not have any particular fragrance or any specific taste but we have to make it flavorful by adding masalas. This makhan mushroom is full of buttery and creamy flavor and your family is going to love this for sure!

  


This makhan mushroom is very simple to make,and you can have this makhan mushroom with chapaties or with hot steaming rice.
I have added fresh green peas also as they are going to add more taste to the mushrooms.
So here goes the yumm yumm recipe of Makhan Mushroom-



Ingredients -
  1. Matar (green peas)- 100 grams
  2. Mushroom - 200 grams (1 pack)(boil the mushrooms in hot water with a pinch of salt for 5 to 7 minutes and strain the water)(cut it into small pieces)
  3. Onions - 3 medium sized(2 grinded and 1 sliced)
  4. Tomatoes - 3 to 4 medium sized(grinded)
  5. Garlic - 1 pod(Grated)
  6. Ginger - 1 tsp(Grated)
  7. Refined vegetable oil - 2 tbsp
  8. Tej patta- 1 leaf
  9. Cumin seeds - 1 1/2 tsp
  10. Red dry chili-2 to 3
  11. Salt as per taste
  12. Coriander powder-2 tsp
  13. Mango powder- 2 tsp
  14. Turmeric powder - 1 tsp
  15. Red chili powder - 2 tsp (as per your taste)
  16. Sugar - 1/2 tsp
  17. Milk - 1/2 cup(small one)
  18. Makhan (yellow butter) - 2 tbsp

Method -
  1. Take a wok add Oil in it let it heat up.
  2. Add cumin seeds,tej patta,dry red chilies and ginger garlic in it.
  3. Now stir it for few minutes.
  4. Now add onion paste in the oil and stir it till it changes its color.(keep the sliced onion on a side)
  5. After that add tomato paste and add salt,sugar,coriander powder,mango powder,turmeric powder,salt and Red chili powder in it.
  6. Mix it well till the masala starts turning golden in color and starts leaving the oil.
  7. After that add peas in it.Roast it well with masala.
  8. Add half cup of water in it.
  9. Stir it till the gravy becomes little thick.
  10. Now add some milk in the gravy.
  11. Wait for a nice boil.
  12. Now in the last when you will find the gravy has cooked up properly ,then add the mushrooms in it.
  13. Now take another small wok add oil around 1 tsp add diced onion in it and some more cumin seeds 
  14. When the onion starts changing it color add it to the gravy like extra tadka.
  15. Lastly add butter in the gravy and stir it for more 5 to 7 minutes.
  16. Your delicious Makhan Mushroom is ready.

Shahi Tukda

Shahi Tukda

Shahi tukda also known as "double ka meetha"means bread dessert!Its a beautiful Indian dessert,mughlai favorite that combines with fried bread slices soaked in hot milk with the sweetness of sugar and aroma of cardamom.
This shahi tukda is the same but with a little twist.A quickest and easiest sweet dish,which will satisfy your sweet craving in few minutes.
Its a mess free dessert which can be made with very few ingredients and can be served as a sweet dish in your house parties or after the dinner as a dessert. 
The crispiness of the bread and the creamy sweet liquid will just melt in your mouth and you are going to be in love with this dessert.


Its a healthy version of dessert as milk is good for health and with some nuts it adds a crunch as well as nutrition.So you can make this shahi tukda for your kids also as they will love to have this and they will get a power up in there growing age.
I normally make this for my daughter as she does not have a sweet tooth,but she loves this dessert,so you should also try this specially for fussy kids and for your loving family members.


Ingredients-

  1. White bread - 2 slices(cut each bread into 4 triangles)
  2. Condensed Milk - 1/2 cup
  3. Milk - 2 tbsp
  4. Cornflour powder - 1 tsp
  5. Water - 2 to 3 tbsp
  6. Green cardamom powder - 1 tsp
  7. Almonds for garnishing(finely chopped)
  8. Refined oil or desi ghee for deep frying.

Method -
  1. Firstly prepare the thick milk .
  2. Take a pan,put it on a low flame.
  3. Add condensed milk in the pan .
  4. Now take a small bowl add 2 to 3 tbsp water and add cornflour powder in it and mix it,now pour this in the condensed milk and stir it.
  5. Now quickly add cardamom powder and milk in it.
  6. If the concoction is too thick add milk ,if its liquidy  add cornflour.
  7. Mix it for few 3 to 4 minutes and switch off the flame.
  8. keep aside
  9. Take another wok add oil or ghee and let it heat properly.
  10. Put the slices of bread in the hot oil or ghee and fry it,till it turns golden crispy.
  11. Now take the bread out and pour the thick milk on the bread.
  12. Garnish it with few chopped almonds.
  13. Enjoy your crispy Shahi Tukda.

Chili Chicken

Chili Chicken(restaurant style)
I think non veg lovers would never say no to chili chicken right?
The most appetizing starter for the non veg lovers!
This chili chicken is perfect for winters as we get a great variety of veggies in this season and its easily available in the local sabji store.
Chili chicken consists of tangy,spicy and little sweetness in its taste.This means a total enjoyable flavor for your taste buds.
This chili chicken tastes like a restaurant dish and no one can judge that its home made because the perfect crispiness of the chicken lasts till the end on your tongue and the thick sauce would make you remember your favorite restaurant.



I have made this chili chicken on Sunday and when my family tasted it they said"when did you ordered ?" :-P i told them its homemade and they were with a big "Wow" word on their mouth with a huge smile on their faces.
This feels so proud that you have not only saved your money but your family is totally satisfied with your cooking skills!
So you can also make your kids and family members happy by making this finger licking chili chicken at home.


Ingredients -

Chicken breasts - 350 gram

For Brine -
  1. Cold water - 1/2 cup
  2. White Vinegar - 1/2 tsp
  3. Sugar - 1/2 tsp
  4. Salt - 1/2 tsp
  5. Ginger garlic paste - 1 tbsp(for marinade)
  6. Crushed black pepper - 1/2 tsp(for marinade)
For Batter -
  1. All purpose flour -1/2 cup
  2. Cornflour - 1/4 cup
  3. Oil - 1 tbsp
For thickening the sauce -
  1. Water -1/4 cup
  2. Cornflour powder - 1 tsp
For sauce -
  1. Spring onions (finely chopped)1 cup(separate the white and green part)
  2. Capsicum - 1 big sized ( cut it in big square pieces)
  3. Onion - 1 medium sized(cut it in square shape)
  4. Garlic - 1 tbsp(finely chopped)
  5. Ginger - 1 tbsp (finely chopped)
  6. Garlic chili paste - 2 tsp
  7. Soya Sauce - 2 tsp
  8. Vinegar - 1 tsp(optional)
  9. Salt as per taste
  10. Sugar - 1/2 tsp
  11. Black pepper powder - 1/2 tsp
  12. Tomato ketchup - 1 tbsp
 

Method -
  1. Firstly take the chicken breast wash it and cut it in small pieces.
  2. Put the chicken pieces in the cold water by adding salt,sugar and vinegar for 1 hour.(in winters you can keep this outside the fridge and in summers you have keep this in the fridge)
  3. Now after 1 hour take the pieces out from the fridge and add Apf ,cornflour,ginger garlic paste and oil in the chicken pieces and mix it well.
  4. Take a wok add oil(make sure the oil should be properly hot)
  5. Put the pieces in batches and fry them.
  6. Keep aside the fried chicken pieces.
  7. Take a pan add oil,put onion stir fry it for 1 to 2 minutes.
  8. Add white part of the spring onions,capsicum,ginger garlic.Saute it for 3 to 5 minutes not more than that.(there is no need to brown them)
  9. Add water,pepper, soya sauce ,chili garlic sauce and stir it well.
  10. Now take a small bowl add cornflour with water stir it and add it in the wok to thicken the sauce.( you can add more cornflour according to its consistency)
  11.  Add salt,sugar and make the flame simmer for few minutes.
  12. Add vinegar and mix it again.
  13. Add tomato ketchup and stir it well,now switch off the flame.
  14. Garnish it with green part of the spring onions.
  15. Now add the pieces of chicken in the sauce(you can double fry the pieces of chicken if they have become cold or soft)
  16. Enjoy your chili chicken.

Salted Banana Chips

Ta-Daaa!!Winter is my favorite season and my favorite time pass is munching all the time :-P I normally enjoy sitting in a warm blanket with my chips or wafers and with a hot cuppa of coffee...Ahha! totally a bliss.But every-time i use to buy chips from the market and they are not good for health :-( so now i have found a solution for this to have a healthy version of munchies i.e banana chips as they are healthy and less expensive then the market bought chips.
Only one magical tip and it will be easier for you to have crunchy - crispy banana chips at home.



Bananas contain a fair amount of fiber,as well as several antioxidants.Your kids and even adults are definitely going to enjoy these chips.They are very easy to make and you can store them in an air tight container to enjoy them at intervals.
You will be easily get the raw banana in every season but i normally make these chips in winters only,because we love to enjoy fried munchies in cold weather.



So here goes the easiest and yummy recipe of homemade healthy salted banana chips-

Ingredients -

  1. Raw bananas - 1/2 kg
  2. Oil for frying ( I have used refined oil ,you can also use coconut oil)
  3. Half cup water
  4. 1/2 tsp salt
  5. Black pepper powder as per taste(optional)


Method -

  1. Take a wok add oil (for deep frying the bananas)
  2. Take the bananas,peel them and slice them with the help of a slicer.(first peel and slice 2 bananas at a time otherwise if you will peel and slice all the bananas they will start changing its color)
  3. Take a bowl add water and dip the banana slices in it and when you will find that the oil is about to be ready,take out the slices and wipe them with a kitchen towel and then fry them.
  4. Now add one batch i.e (two bananas)in the hot oil.
  5. No need to worry if they are sicking to each other (try to separate them with the strainer spoon(channi) 
  6. Now take a small cup with half cup of water and add salt to it and mix it with a spoon.
  7. Take 2 to 3 spoons of salted water and pour it in the frying bananas.
  8. No need to worry if you get a crackling sound.
  9. Now flip them,when you will find the bananas are getting golden and crispy then take them out on an absorbent paper and do the same process with your second batch of bananas.
  10. Lastly sprinkle some pepper powder and toss it well.
  11. Once they gets cools down ,you can enjoy them or keep them in an air tight container.

Winters without Baigan ka Bharta is totally incomplete!As fresh green peas are in season now days,so why not to enjoy the Baigan ka Bharta with peas.
This Bharta I have named it as fiery because its very spicy and Chatpata!
When i was a kid i never like to eat bharta :-P same thing is with my kid but this time i have made it spicy and tangy one,so she loved it!Kids do like spicy and finger licking veggies and this one was really delicious!


I love to have the bharta with my comfort food i.e.bread :-D
But in winters this bharta goes really well with hot plain paranthas and a cup of tea!Brinjal is very good for health also like its good for heart,being rich in fiber,potassium and vitamin B6 and lowers the heart disease and risk!


So here goes the must try recipe of Fiery Baigan ka Bharta -

Ingredients -

  1. Brinjals - 2 medium sized
  2. Peas - 150 grams
  3. Onions - 2 medium sized (Roughly Chopped)
  4. Tomatoes - 3 to 4 big sized (finely chopped)
  5. Green thick chilies (moti Mirch)- 1 to 2 
  6. Garlic - 7 to 8 (Finely chopped)
  7. Ginger - 2 tsp (finely grated)
  8. Red dry chilies - 4 to 5 pieces
  9. Yellow Butter - 2 tsp
  10. Cumin seeds - 1 tsp
  11. Salt as per taste
  12. Red chili powder-2 tsp
  13. Turmeric powder - 1 tsp
  14. Dry mango powder - 2 tsp
  15. Coriander powder - 2 tsp
  16. Sugar - 1/2 tsp
  17. Coriander leaves - 2 tbsp(finely chopped for garnishing)


Method -

  1. Firstly take the brinjals wash and apply some oil on it and then roast them on the flame.
  2. When the brinjals will turn cool peel off its skin and keep aside.
  3. Now take a wok add oil let it heat up.
  4. Add red dry chilies and cumin seeds.
  5. Now add onions to it.
  6. Stir it till the onion changes it color.
  7. Now add the tomatoes and mix it well.
  8. Add green chilies(moti mirch)
  9. Now add sugar,salt,coriander powder,red chili powder and turmeric powder(do not add mango powder now)
  10. Now when the masala starts leaving oil add peas and brinjal in it.
  11. Stir it properly and mash the brinjal nicely.
  12. Now add mango powder and again mix it well.
  13. When you will find the peas have turned soft and the masala has mixed up properly with the brinjal ,then add salted butter and switch off the flame.
  14. Then laslty garnish it with coriander leaves.
  15. Enjoy your Fiery Baigan Ka Bharta.

Spicy creamy Sandwich

Spicy Creamy Sandwich
Sandwich is the most easiest and quickest choice of food for your breakfast or for lunch also.Even sometimes i like to make them for my dinner also,when i am home alone ;-) because they are jiffy and hassle free to make.
These sandwiches are spicy but your kids can also enjoy them by making it less spicy as the creaminess will reduce the spiciness and balances the flavor.
How can i forget that these sandwiches are healthy too because it contains veggies and when you are going to mix it up with there favorite mayo and sauce,kids would never deny for it.


I have served the sandwiches with some wafers and mayo salad,
this will enhance the taste of the sandwiches!
You can also send these sandwiches in your kids tiffin as they will not turn soggy for few hours because its crispy from outside and soft from inside.


So no more wait to enjoy this yummy recipe -
Ingredients-

  1. Bread slices - 4 slices
  2. Cucumber - 1 (grated)
  3. Carrot -1(grated)
  4. Capsicum -1 (Cut in juliennes)
  5. Onion - 1 (finely sliced)
  6. Coriander leaves - 1/2 cup (finely chopped)
  7. Mayonnaise -3 to 4 tbsp 
  8. Salt as per taste
  9. Pepper powder - 1 tsp
  10. Green chilies - 2 (finely copped)(optional)
  11. Hot and sweet sauce - 2 tbsp
  12. Butter to fry the bread.

Method -
  1. Take all the veggies except coriander leaves and put them in a bowl.
  2. Add salt and pepper in it.
  3. Now add mayonnaise in it.
  4. Mix it well.
  5. Add hot and sweet sauce and lastly add coriander .
  6. Again give it a mix.
  7. Take a tawa heat it up.
  8. Spread butter on the tawa.
  9. Take the bread slices and fill it with the stuffing and put it on the tawa.
  10. Press the bread with a spatula or any flat spoon.
  11. Now when one side will turn golden,flip it to the other side and let the bread turn crispy.
  12. Your yummy Spicy Creamy Sandwiches are ready to gobble up!
  13. Enjoy it with some wafers and some leftover filling.

Chutney Aloo

Again Aloo Dish on my blog ;-) Sounds boring?Na - Na! do not feel like that because a simple aloo can be made by doing variation through adding flavors in your cooking skills.
This chutney Aloo is spicy, tangy and you cant stop yourself from eating it just like a chat!
When my daughter asked mom what are you preparing for dinner ?I told her ALOO  :-P and she was like mom please "No More aloo",I am bored of this".Oh!I said ok you can have your bread cheese :-( 
When I served the dinner with my Chutney Aloo and hot Ajwain Paranthas,she said 'mom these potatoes are looking different' I said that have your bread cheese ;-) ,she kept her bread on a side and took a bite and asked for more. Haha!Such a sweet feeling you get as a mother that your kids are loving simple Aloo.



This chutney Aloo you can have it as a chat or as a proper vegetable in your dinner,breakfast or lunch,as per your choice.
The crispiness of fried aloo and the flavor of coriander is really different.So you can try this recipe for your kids as an evening snack option or in their tiffin also.


Here goes the must try recipe of Chutney Aloo

Ingredients-

  1. Baby potatoes - 10 to 11 
  2. Onion - 1 medium sized(thinly Sliced)
  3. Coriander leaves - half cup
  4. Green chilies - 2 to 3 (optional)
  5. Oil for frying
  6. Salt as per taste
  7. Red chili powder - 1 tsp
  8. Coriander powder - 2 tsp
  9. Mango powder - 2 tsp
  10. Turmeric powder - 1/2 tsp



Method -

  1. Firstly par boil the potatoes and peel off its skin.
  2. Take coriander leaves and chilies and grind them in a mixer.
  3. Now Take a wok add oil around 3 tbsp and let it heat.
  4. Add sliced onions and fry them till they turn little brown in color.
  5. Now add the boiled potatoes in it and fry them till they start changing its color.
  6. When the potatoes are done add the coriander and chili paste in the fried aloo.
  7. Add salt,chili powder,coriander powder,dry mango powder and turmeric powder and mix it well.
  8. Your chutney Aloo are ready ( for more tangy flavor you can lime juice also)
  9. Enjoy :-)

Puliodharai /Tamarind Rice with khatti Meethi chutney

Puliodharai / Tamarind Rice With Khatti Meethi Chutney

Puliodharai is a famous South Indian dish! The tangy flavor of tamarind and the aroma of kadi patta is just superb.I am not a South Indian but when i was a kid i used to go to my mom's office sometimes and there was a south Indian aunty and she was my favorite :-D because whenever i used to come with my mom in her office she used to make this special tamarind rice for me ;-) and i love to go to my mom's office whenever i get a chance :-P 
Those days became a sweetest memory for me as she got retired and i got married!But still those tamarind rice was still on my mind and finally i nailed it with the same beautiful flavors and now its my daughter's favorite :-) 


I have served this rice with a flavorful chutney which is little sweet and sour and it is just balancing the taste of sourness of rice with a little sweetness and spiciness of the chutney!
This chutney goes very well with the paranthas,dosas or Idlies .
If you have made this chutney with tamarind rice and still you have the leftover chutney,need not to worry as you can store this in refrigerator for at least 4 to 5 days and you can have this with your normal daily food as it will be added as a condiment in your daily meals!




  So here goes the tempting recipe dedicated to my special Aunt :-)

Ingredients -
For tamarind rice -

  1. Simple boiled rice - 2 cups
  2. Oil - 2 tbsp
  3. Onions - 1 medium thinly sliced
  4. Peanuts - 2 tbsp
  5. Kadi Patta (curry leaves)- 5 to 6 leaves (wash them first with water)
  6.  Brown Mustard Seeds (rai) - 1 tbsp
  7. Tamarind water - 1 cup (soak the tamarind pulp in 1 cup of  water for half an hour strain it and store that tamarind water)
  8. Red dry chilies - 5 to 6
  9. Chana dal - 1 tbsp 
  10. Salt as per taste
  11. Red chili powder as per taste
  12. Coriander powder - 1 tsp
  13. Turmeric powder - 2 tsp
  14. Dry mango powder - 1 tsp
  15. Sugar - 1/2 tsp
For chutney
  1. Tomatoes - 2 cut in square shape
  2. Onion - 1 (square shape)
  3. Tamarind pulp - 1 tbsp
  4. Jaggery powder - 1 tbsp
  5. Chili powder - 1 tsp
  6. Salt as per taste
  7. Kadi patta - 4 to 5 leaves
  8. Cumin seeds - 1 tsp
  9. Red dry chilies - 2 to 3
  10. Oil 1 and 1/2 tsp



Method -
  1. Take a wok add oil in it and let it heat properly.
  2. Add brown mustard seeds curry leaves and dry red chilies let it crackle.
  3. Add peanuts and chana daal fry them till they turn little crispy.
  4. Add sliced onions and fry them also.
  5. Now add salt,turmeric powder,red chili powder,sugar and coriander powder and mix it well(do this on a low flame otherwise the peanuts and chana daal can get burnt)
  6. Now add the boiled rice in the wok .
  7. Pour the tamarind water on the rice and mix it very gently so that the rice should not break .
  8. Lastly add some dry mango powder and again mix it well.
  9. Your Puliodharai/Tamarind rice is ready to be served.
Khatti Meethi Chutney
  1. Take a wok add oil .
  2. Add onions in it and stir the onions for 2 to 3 minutes.
  3. Now add tomatoes and stir it for more 2 minutes.
  4. Add jaggery powder.
  5. Now add tamarind pulp.
  6. Add salt in it.
  7. Stir it till the ingredients gets mixed up properly.
  8. Keep aside and let it cool.
  9. After it cools down grind it in a mixer.
  10. Now take that same wok add 1/2 tsp oil.
  11. Add cumin seeds,red dry chilies and curry patta .
  12. Add the paste in this flavored oil.
  13. Mix it well your tangy sweet chutney is also ready to be served with Tamarind Rice.

Triple flavored fudge

Triple flavored fudge
Sounds weird ?Must be :-D 
This fudge was a real  fun for me as it is an experimented recipe made by me.But believe me it came out so yum that it got finished in few minutes ! 
The creamy fudge just got melted in the mouth and the buttery taste has left the creaminess on my tongue!
The different flavors of this fudge will give you a feeling of spiciness , chocolate and a crunch means variety of taste and its your choice which one you want to have ;-) 


  
I love white chocolates as they are already creamy but by adding two more ingredients ,yes only 2 more the fudge got creamy and softer !
The spiciness of chili ,the nutty flavor of nuts and the sprinkled cocoa is going to add a magic on your plate and of course on your taste buds .
So a very easy recipe to be made with only three ingredients and you are going to say'Wow' :-) 
My family loved this experiment what about yours? So you should try this dessert can say spicy dessert ;-) also.



This fudge also contains almonds as it is very good for eye sight and with the combination of white chocolate it will give you instant energy specially for the fussy kids.
So here goes a tongue twister recipe -

Ingredients -

  1. White chocolate bar - 150 grams( around 1 cup)
  2. Salted Butter - 50 grams
  3. Condensed milk - Half cup ( around 2 tbsp)
  4. For nutty flavor - Almonds chopped and raisins - 2 tsp and 2 oreo biscuits ( break them into small pieces)
  5. For Chili fudge - 2 tsp chili flakes
  6. For cocoa fudge -1 tsp cocoa powder.


Method -
  1. Take a wok add water and put a glass bowl on it (double boiling method)
  2. Now when the water gets heated up add butter in it .
  3. When the butter starts melting add white chocolate bars in it.
  4. Stir it till the chocolate gets melted properly.
  5. Lastly add Condensed milk and switch off the flame mix it very properly.
  6. Now get ready with your chopped almonds,chili flakes and oreo and cocoa powder.
  7. Take a box or a square tin and place a butter paper on it now spread your fudge on it .
  8. Divide it in 3 parts virtually .
  9. First part just add oreo biscuits in between and add some chopped almonds and raisins
  10. Second part is a plain fudge just sprinkle cocoa powder on it.
  11. Third part sprinkle chili flakes on the top only.
  12. Refrigerate your fudge for 1 and half hour .
  13. After 1 and half hour take out the butter paper and cut the fudge into pieces.
  14. Enjoy your Triple Flavored fudge.

Cheese onion rings

Yeah!I'am back with my favorite cheeeesseee  ;-) 
These onion rings are just you cant control yourself by eating it and those who are concerned about their weight they are going to overlook this problem as these onion rings are irresistible :-D 
I have made many dishes with cheese but they were with potatoes,so it was little heavier but these onions rings are not so as they do not contain potatoes!
In this recipe i have posted some pictures which are going to help you while making them.So it will be easier for my foodie friends to prepare this dish :-) 
Cheese onion rings you can have this in the evening snacks or the best part is that you can give this to your children in their tiffin box and they are going to be very happy to after eating this!




These Cheese Onion Rings are crispy ,little spicy and tender from inside!You can have these onion rings with butter fried bread also.As my mouth is already filled with water ! hahaha!
Cheese is our kids favorite,so i always try to give them a variation through different skills of cooking and ingredients , so they should not get bored of the same snacks.So here comes the tempting yummy Cheese Onion Rings recipe with pictures-



 Ingredients -

  1. Mozzarella cheese - Half cup (keep it at room temperature)
  2. Onions - 2 medium sized or big one (do not go for small onions)
  3. All purpose flour - 2 to 3 tbsp
  4. Cornflour - 1 tsp
  5. Bread crumbs - for coating
  6. Chili flakes - 1 tsp
  7. Salt as per taste
  8. Oil for frying


Method -

  1. First take the onions and slice them in thick form.
  2. Now make a batter in a bowl by adding APF Cornflour powder salt chili flakes and add little water to give it a paste form (not too thick neither watery)       
  3. After that take a pan and heat it with oil for frying your rings.
  4. Then the tricky part comes to fill the onions.
  5. Take mozzarella and cut it in thin long slices and fill them in the onions by taking the onions rings out.
  6. After filling it rearrange the rings and try to combine it together.
  7. Then take the rings and dip them in the maida paste and then coat it with bread crumbs.
  8. Deep fry it and flip them till they turn crispy and golden in color.
  9. Take them out put it on an absorbent paper and enjoy it with ketchup :-)

Pokemon palak Paneer

Pokemon palak Paneer

I'am not a green veggie lover :-( as kids doesn't like to have leafy vegetables me too is having the same choice ;-) but friends its not good to be like this!because we all know green vegetables are always good for eyes,skin and blood.
You must be wondering why i have kept this funny name for this dish, so its a story behind it .When my daughter refuses to eat palak i use to tell her that "if you want to become strong like pokemon i.e. her favorite cartoon then you have to eat this palak and by saying this she had it but only 2 to 3 spoons!So this is not being done for her good health :-( So it was challenge for me to give my daughter "health with taste"so i have tried a different taste for palak  paneer and it was a HIT :-)



The thick creamy gravy is going to be loved by all your family members and now even myself has started eating palak paneer  ;-)
Palak paneer is a good power pack for growing children as well as adults.Its good for weight loss,eye sight,healthy strong bones,lowers blood pressure and most important boosts immunity.
So as winters have come and you will be getting spinach in a huge bulk ,so you should start including this in your diet and become "pokemon" hahah! Jokes a part but its a must try recipe specially for the kids who hate palak ,because it is creamy ,tangy and flavored !So they will never say NO to this.



So here goes the recipe -

Ingredients -

  1. Palak (spinach)-1/2 kg (for 3 to 4 people)
  2. Paneer cubes - 150 grams
  3. 3 tomatoes(cut in small cubes)
  4. 2 onions ( roughly chopped )(not finely chopped)
  5. Garlic- 7 to 8 cloves
  6. Ginger - 1/2 tsp
  7. Green chilies - 4 to 5 (optional)
  8. Yellow salted butter - 1 tsp
  9. Fresh cream or malai -2 tsp
  10. Refined oil - 2 tsp
  11. Salt as per taste
  12. Cumin Seeds - 1 tsp
  13. Red chili powder -1 tsp
  14. Coriander powder - 2 tsp
  15. Turmeric powder -1/2 tsp
  16. Dry mango powder - 2 tsp
  17. Sugar - 1 pinch

Method -
  1. Firstly take the spinach cut its stems and wash it very properly.
  2. Then take a pan add water and boil the spinach for 10 to 15 minutes.
  3. After that take out the palak and strain its water and again wash it and strain the water and let it cool down.
  4. Then grind the palak in a mixer grinder.
  5. Now take a pan add oil in it.Let it heat.
  6. Take green chilies ,ginger and garlic and make a paste of it.
  7. Now in the oil add cumin seeds and the paste.
  8. Stir it for few minutes and add onions in it.
  9. Stir it till the onions starts turning little pink in color.
  10. Now add tomatoes in it.
  11. Mix it.
  12. After that add sugar,turmeric powder,red chili powder,coriander powder,salt,dry mango powder.(I hope i haven't any masala mentioned above  ;-)
  13. Now stir it very well till the tomatoes turns very soft and just mash it properly with the help of a flat spoon(kadchi) 
  14. Now add palak puree in it and roast it for 15 minutes on slow flame.
  15. Add butter in it.
  16. When the palak is totally mixed up add fresh cream or malai in it .
  17. Stir add till the gravy becomes thick.
  18. Lastly add paneer cubes and enjoy your Pokemon Palak Paneer .
  19. Serve it with hot steaming rice or paranthas :-)

Winters are on its way and and we will be getting a great variety of veggies as my favorite peas (matar) is on my plate!
This is a total vegetarian dish but for non veg lovers its gives a close taste to your non veg keema!These are soya granules cooked in thick creamy gravy. Soya is rich in protein as it improves the hair growth and gives a good volume!Soya is also very good for growing children but kids normally don't like to eat this,but this type of make of granules your kids are going to love this because its tangy,spicy and creamy.


This makhani keema matar you can enjoy this with hot parantha or easy bread :-) The thick gravy just got absorbed in the soya and when you take a bite it gives a succulent creamy taste .
Soya comes in chunk form also but i find granules more tasty and with the combination of peas i just love it...
So no more wait for this yummy recipe -


Ingredients -

Firstly take the granules around 1 cup and boil them in a pan by adding 1 pinch of salt and then strain it with fresh running water and squeeze the water.
  1. Onions - 2 medium sized(grinded)
  2. Tomatoes - 3 to 4 medium sized(grinded)
  3. Peas - 150 grams
  4. Garlic - 1/2 pod(finely chopped)
  5. Refined vegetable oil - 2 tbsp
  6. Cumin seeds - 1 tsp
  7. Salt as per taste
  8. Coriander powder-1 tsp
  9. Mango powder- 1 tsp
  10. Turmeric powder - 1/2 tsp
  11. Red chili powder - 1 tsp (as per your taste)
  12. Sugar - 1/2 tsp
  13. Milk - 1 cup(small one)
  14. Fresh Malai or cream - 2 tbsp

Method -

  1. Take a wok add oil and heat it up.
  2. Add cumin seed and garlic in it.
  3. Now stir it for few minutes.
  4. Now add onion paste in the oil and stir it till it changes its color.
  5. After that add tomato paste and add salt,sugar,coriander powder,mango powder,turmeric powder,salt and Red chili powder in it.
  6. Mix it well till the masala starts turning golden in color and starts leaving the oil.
  7. After that add peas in it.Roast it well with masala.
  8. Add half cup of water in it.
  9. Stir it till the gravy becomes little thick.
  10. Now add some milk in the gravy.
  11. Then add fresh malai in it.
  12. Wait for a nice boil.
  13. Now in the last when you will find the gravy has cooked up add soya granuels in the gravy.
  14. Now stir the gravy till it gets absorbed in the granules.
  15. Enjoy it with paranthas or bread.
